Ginny Grant stretches out the summer with clever ideas for late-summer vege.

 

Late summer often means a glut of vegetables, especially zucchini and capsicums. Our meals become even more vege-focussed, with plenty of salads at their core. The barbecue is often on and sometimes I prepare extra vegetables by roasting or grilling capsicums for an easy, quick meal later on in the week. Salads veer to the sharper end with dressings that cut through the sweetness of the vegetables, or sometimes if I want to highlight an interesting olive oil, then the barest of interference is my preference.
