This is probably one of Claudia Roden’s lesser-known books, however it is one of my favourites of hers. It’s as much a book on the cultural significance of food in Spain – the ingredients, the regions and the specialities – as it is a recipe book. It’s a cookbook that you should read before you begin cooking, as to get the best out of it you have to understand what goes with what and, more importantly, why.
With Spanish cuisine on her mind, Felicity O’Driscoll of Cook the Books picks her favourite cookbooks. Visit the shop at 78 Kelmarna Ave, Ponsonby, Auckland or go to cookthebooks.co.nz
