WHETHER IT UNFOLDS over coffee, wine, toast, while mowing the lawns, driving, late at night or early morning, coming up with recipe ideas is always a pleasurable task. This time we were lucky enough to be dreaming up ideas from Bangkok. As you’d imagine, some of the inspiration came pretty quickly just walking through the Khlong Toei markets where the muggy air was thick with the scent of ginger, chilli, makrut lime, fish sauce and roasting nuts, but other ideas came from different windows of Bangkok life – posters in 7-Eleven stores, cartoons on instant noodle packets in the train station and unassuming roadside stalls. We hope you’ll feel inspired by this slice of Thai.
