Ingredients

Pastry:
2 cups plain flour
1 egg
150g butter, roughly chopped
130g cheddar, chopped
½ tsp salt
Filling:
4 medium-sized eggs
125ml cream
3 tbsp fresh parsley, chopped
2 tbsp fresh dill
1 clove garlic, finely grated
1 small red onion
5 small new baby potatoes, cooked
300g baby spinach leaves, roughly chopped
200g Regal Hot Smoked Salmon - Classic
salt and pepper

Brunch made easy with this smoked salmon crowd pleaser.

 

 

Instructions

1.Pastry:
2.Place the butter, flour, grated cheese and salt in food processor and blitz to a crumb.
3.Add the egg and blitz again until a dough froms.
4.Shape the dough into a disk and wrap woth baking paper, refrigerate for 2 hours.
5.Heat the oven to 180°c regular bake.
6.On a light floured surface, roll out the dough into a circle roughly 4mm thick.
7.Gently roll the pastry up and around the rolling pin and carefully unroll it over a 23-26cm loose bottom tart tin.
8.Press the pastry into the sides and edges of the tin, if need be, cover any cracks with extra pastry.
9.Use a sharp knife to trim off the excess dough.
10.Place a sheet of baking paper over the pastry and fill with pastry weights, alternatively you can use rice or dried beans.
11.Bake the pastry for 20 minutes, then remove from the oven and carefully take out the baking paper and weights.
12.Return to the oven for 6-8 minutes until lightly golden.
13.Filling:
14.In a large bowl, whisk together the eggs, creams, herbs, garlic, salt and pepper.
15.Thinly slice the potatoes and red onion and set aside.
16.Place the spinach in a large colander and pour over 1.5L of boiling water.
17.Set aside to cool then squeeze out any excess liquid.
18.Fill the pastry with layers of spinach, potato, onion and large chunks of hot smoked salmon.
19.Pour the egg mixture over the filling and carefully transfer to the oven.
20.Bake for 35-40 minutes or until golden and the egg mixture has set.
