Purple Cabbage & Broccoli Raw Ramen Salad

85g mayonnaise | |
1⁄2 head broccoli, cut into florets | |
125g purple cabbage, shredded | |
1 carrot, peeled, shaved into ribbons | |
1 packet ramen noodles, uncooked, broken into pieces (we used Yum Yum brand) | |
1⁄2 lime, cut into 6 wedges, to serve | |
MAYONNAISE | |
1 egg yolk | |
250ml grapeseed oil |

Instructions
1. | TO MAKE THE MAYONNAISE |
2. | Whisk the oil into the egg yolk, starting slowly with drips of oil until it is creamy and blended. |
3. | TO MAKE THE SALAD |
4. | Combine the mayonnaise with the seasoning sachet from the packet of ramen noodles (and if your brand includes an oil sachet add the oil, too). |
5. | Add the mayonnaise to all the other ingredients except the lime in a bowl and toss to mix thoroughly. |
6. | Serve with the lime wedges. |
