Oyster Mushrooms With Garlic, Herbs & Sumac

2 tablespoons olive oil | |
3 cloves garlic, sliced | |
200g oyster mushrooms | |
a squeeze of lemon juice | |
¼ cup soft herbs such as dill, chervil, mint | |
1 teaspoon sumac | |

Instructions
1. | Heat the oil in a frying pan over a medium heat. |
2. | Add the garlic and fry for about 30 seconds. |
3. | Add the mushrooms and a sprinkle of salt and some pepper and cook for a few minutes until just starting to wilt. |
4. | Squeeze over a little lemon juice. |
5. | Pile onto the pizza base and top with fresh herbs and a sprinkle of sumac. |
