45ml Havana Club 7-year-old Rum | |
45ml Gosset Grande Brut Champagne | |
25ml fresh lime juice | |
25ml sugar syrup | |
10 mint leaves, plus extra to garnish | |
SUGAR SYRUP | |
1 part caster sugar | |
1 part water |
SNACK
Baked oysters with Champagne sabayon & caviar

Instructions
1. | Combine all the ingredients except the Champagne in a cocktail shaker. |
2. | Shake with ice, double strain into a cocktail coupe and top with champagne. |
3. | Garnish with mint. |
4. | SUGAR SYRUP |
5. | Mix to dissolve. |
