Lime Leaf & Coconut Gimlet

30ml vodka | |
10ml London Dry gin | |
20ml lime leaf liqueur (see recipe) | |
20ml coconut cordial (see recipe) | |
10ml lime juice | |
5 drops Fee Brothers peach bitters | |
lime leaf, to garnish | |
LIME LEAF LIQUEUR makes 400ml / preparation 5 mins / infuse 24 hrs | |
125ml vodka | |
5g whole fresh lime leaves | |
125g sugar | |
125ml cold water | |
COCONUT CORDIAL makes 250ml / preparation 5 mins | |
200ml coconut water | |
50g caster sugar | |
2½g citric acid | |
a pinch sea salt to taste |
SNACK
This gimlet pairs well with sashimi or try it with salmon tartare on crispy rice cakes.
A gimlet is traditionally gin and lime juice. At Clipper they make it textural and tropical by infusing lime leaf and adding coconut.

Instructions
1. | LIME LEAF & COCONUT GIMLET |
2. | Measure the ingredients into a cocktail shaker over ice and shake. |
3. | Pour into a frozen cocktail glass and garnish with a small piece of lime leaf. |
4. | LIME LEAF LIQUEUR |
5. | Put the vodka and lime leaves into a resealable plastic bag. |
6. | Put in the freezer for 24 hours to infuse, then strain. |
7. | Put the sugar and water in a jug and mix until the sugar is dissolved. |
8. | Mix the infused vodka and sugar syrup together. Bottle and store. |
9. | COCONUT CORDIAL |
10. | Mix ingredients together until completely dissolved and combined. |
11. | Bottle and store in the fridge. |
12. | Use the cordial within 3 weeks. |
