1 potato, thinly sliced in rounds | |
5 uncooked pizza bases | |
2 leeks, sliced into matchsticks | |
extra virgin olive oil | |
1 cup shaved parmesan | |
zest of 1 lemon |

Instructions
1. | Place the potato rounds onto the pizza bases followed by the leek and a drizzle of good olive oil. |
2. | Cook for 5-7 minutes or until the bottom of the base is crisp. |
3. | Once cooked, sprinkle the pizza generously with shaved parmesan and lemon zest. |
