Cucumber & Mozzarella Salad with Hot Sauce

4 baby cucumbers or 1 telegraph cucumber, thinly sliced | |
1 ball mozzarella or cherry mozzarella, thinly sliced | |
2 tablespoons chopped chives | |
1 tablespoon lemon juice | |
2 tablespoon extra virgin olive oil | |
a few drops of hot sauce |
VEGAN:
Use a vegan mozzarella.
You don’t really need a recipe for this but sometimes it’s good to be reminded how dazzling the combination of a hot sauce with cool cucumber and creamy mozzarella is. Vary the herbs to what you have to hand.

Instructions
1. | Arrange the cucumber and mozzarella on a platter. |
2. | Combine the chives, lemon juice and olive oil. |
3. | Drizzle over the cucumber and mozzarella and season with salt. |
4. | Add drops of hot sauce to taste. |
