Ingredients

300g green peas (frozen is OK if fresh are not available)
1 small onion, diced
1 small clove garlic
1 unripe banana, peeled, finely sliced
2 ripe avocados
1 tablespoon lime juice
2 teaspoons Tabasco sauce
1 teaspoon salt

This combo may sound odd, but the taste and texture are a match made in heaven – familiar, but noticeably different. It looks identical, so catches people off guard in the best way.

Instructions

1.Blanch the peas in boiling water for 2 minutes, refresh under cold running water until cool then drain thoroughly.
2.Put the onion and garlic into a large mortar and pound for 3-4 minutes to form a paste.
3.Add the banana and pound to a pulp – a few lumps are OK.
4.Add the peas and continue to pound for 2-3 minutes.
5.Add the avocado flesh to the mortar and combine with the other ingredients.
6.Add the lime juice, Tabasco sauce and salt and stir to combine.
7.Check the seasoning and add more Tabasco and salt to taste if desired.
8. Serve with crunchy corn chips.
