Avocado, Summer Pea & Green Banana Guacamole

300g green peas (frozen is OK if fresh are not available) | |
1 small onion, diced | |
1 small clove garlic | |
1 unripe banana, peeled, finely sliced | |
2 ripe avocados | |
1 tablespoon lime juice | |
2 teaspoons Tabasco sauce | |
1 teaspoon salt |
COOK’S TIP:
This can also be made in a food processor. Blitz the onion/garlic finely, but only pulse the remaining ingredients – you want to avoid blending it too smoothly.
This combo may sound odd, but the taste and texture are a match made in heaven – familiar, but noticeably different. It looks identical, so catches people off guard in the best way.
Instructions
1. | Blanch the peas in boiling water for 2 minutes, refresh under cold running water until cool then drain thoroughly. |
2. | Put the onion and garlic into a large mortar and pound for 3-4 minutes to form a paste. |
3. | Add the banana and pound to a pulp – a few lumps are OK. |
4. | Add the peas and continue to pound for 2-3 minutes. |
5. | Add the avocado flesh to the mortar and combine with the other ingredients. |
6. | Add the lime juice, Tabasco sauce and salt and stir to combine. |
7. | Check the seasoning and add more Tabasco and salt to taste if desired. |
8. | Serve with crunchy corn chips. |
