Fiona Smith conjures up the fresh, vibrant tastes of Thailand.

I recently had a trip to Thailand and was inspired to share some of my favourite recipes. I love the feasting nature of Thai meals, with a few dishes being served rather than a one-plate-each scenario. For a dinner party, choose two or three of the dishes below and add rice, extra limes and herbs and some fresh chillies sliced and mixed with a little rice vinegar, for people who like a bit of extra heat. I do love sticky rice, especially with larb, and I have tried to find brown Thai sticky rice but have been unsuccessful. Brown jasmine is really good, so go for that if you prefer.
