This relatively new waterfront restaurant from Hobart hospo professionals Will Priestley and Christian Ryan has incredible views of the port, however, turn your gaze inwards and you might feel you are on a Mediterranean seaside adventure. It was early days for the team on my visit and the menu felt like it leaned toward predominantly Greek influences intermingled with outstanding local tastes. Chargrilled Tassie octopus comes with burnt lemon and a local roe in the form of taramasalata, crudo has splashes of Campari mingling with citrus and chilli, oysters are treated with a wild-pollen mignonette and the lamb shoulder is ramped up with a tzatziki using a local goat curd to swap out the traditional yoghurt. With chef Christian being a graduate of Melbourne’s iconic restaurant Taxi Kitchen and London’s prestigious Savoy Grill, and with more than nine years at the helm of popular Hobart restaurant Aløft, his new addition to the Brooke Street Pier is one to watch. restaurantmaria.com.au
