Lillies is a triumvirate of a cidermaker, a winemaker and a chef, cloaked in a warehouse in an urban, industrial ’hood of Christchurch.
WHY CHOOSE THIS RESTAURANT?
Bearing minimal signage and with token foot traffic, it takes a keen eye to spot Lillies, but first-timers should be highly motivated to locate this destination given the considerable word-of-mouth buzz it has created since opening. Operating on a walk-in basis, first impressions are of upbeat diners with limited spare tables. Staying true to its neighbourhood, the layout is simple and uncomplicated. The initial optics of the large open bar and pizza oven symbolise what the trio make under one roof. In the absence of designer wallpaper and extravagant costly fit-outs, the green walls slide back to the cellar, showing a peek at the working space and creating an immersive experience. Less than a year old, Lillies oozes fresh and solid culture.
ABOUT THE CHEF
Finbar McCarthy is renowned as one of Christchurch’s most talented chefs, and is known most recently as head chef at Gatherings. Finbar’s food is deeptively simple and delicious, and ingredients can have their moment without over-complicating the dish.
ABOUT THE MENU
The impressive pizza oven and fire serve as the foundation for the menu which is divided into ‘Pizza’ and ‘Not Pizza’. The humble carrot pizza will never be forgotten. With a carrot and crème fraîche base, smoked sofrito, pecorino, confit chilli oil, and pickled carrots, this is arguably the best thing ever to happen to the humble carrot. The corn was another highlight, charred on the fire with bacon, lemon and chilli. Raw blue moki was perfectly fresh, glazed with oils of charcoal and soy alongside a perfectly balanced cucumber salad. Dessert is, of course, also a must – you can’t go past the soft-serve ice cream.
ABOUT THE TEAM
This innovative concept is the force of Will Lyons-Bowman and Liam Kelleher. Both Ōtautahi locals have solid backgrounds in the industry, and between them they make Vita and Lele Wines and Lilli Cider. Lillies opened last winter at a time when many were feeling the pinch, yet people have constantly flocked to their tucked-away venue, enjoying the refreshing experience. The wait staff are down to earth and friendly.

Will and Liam’s beverage list offers a lot by the glass. Highlights were the Vita Bianco frizzante and Apple and Quince Lilli Cider.
