Farmer’s fresh from Mahoe Cheese is a simple unaged peasant-style cheese. Cheesemaker Jesse Rosevear tells me he was served fresh cheeses like this in mountain huts in Germany. This cheese tradition inspired Jesse as it’s a simple style of cheese common worldwide with farmers. The small gaps between the gently pressed curds give it a springy texture and a milky, fresh flavour, giving a cheese that is supremely snackable throughout the year, either served simply on sourdough or paired with whatever is in season throughout the year – truly a promiscuous cheese chameleon. Made from the milk of some of the happiest cows in New Zealand who have heaps of organically farmed grass to chew on, and with any batch made throughout the year presenting different nuances of taste throughout the seasons, Mahoe Farmer’s Fresh is tender, with a delicate texture. It’s a real, simple, traditional and fresh cheese that can be enjoyed time and time again. I reckon customers are ultimately the best judge of cheese so you decide. Yeah baby, talk curdy to me.
