There has been a lot of noise about eggs recently, with empty shelves and higher prices. Free-range eggs are not only kinder to the chickens, they really are tastier and, if you think about it, eggs – at around $1 each – are still one of the cheapest forms of protein available. Eggs are not just for breakfast. In these recipes I have shared some of my favourite ways to make eggs the central protein in your dinner.
