There has been a lot of noise about eggs recently, with empty shelves and higher prices. Free-range eggs are not only kinder to the chickens, they really are tastier and, if you think about it, eggs – at around $1 each – are still one of the cheapest forms of protein available. Eggs are not just for breakfast. In these recipes I have shared some of my favourite ways to make eggs the central protein in your dinner. Simple, fast to cook and full of flavour and nutrition, all from happy hens. That makes me happy.
