Áine Carlin, touted as the UK’S bestselling vegan author, says she wants the recipes in this book to be a jumping off point for people wanting some encouragement with plantbased cooking. So, whether you’re a committed vegan keen for more inspiration, someone looking to nurture vegan friends and family, or simply wanting suggestions to support eating less meat, there’s plenty of inspiration here. Some chapter headings such as ‘Zesty’, ‘Fresh’ and ‘Earthy’ mean it’s not intuitive to navigate, but if you’re happy to just browse then dishes such as the leek, potato and artichoke galette, hasselback apples with coconut caramel sauce and wasabi-roasted brussels sprouts will have you tying on the pinny. In winter the soup pot gets a good workout in our house and there’s plenty to keep us warm here, with suggestions for imaginative toppings, too : chestnut and miso soup with crunchy chickpeas; curried coriander and parsnip soup with roasted cashews; and turmeric and ginger sweet potato soup with roasted tamari tofu. The food presented here is exciting, sometimes intriguing, varied and nutritious. Yes, and it happens to be vegan, too.
