If you’re already a fan of the Two Raw Sisters then you don’t need me. Just take this follow up to Salad and run with it. For those who haven’t come across the phenomenally popular duo, then this book builds on their signature layer-up- a-platter vege dishes – take a hero vege, add grains or pulses, maybe noodles or rice, inject flashes of flavour with a star dressing, liven it all with spanking fresh herbs and crunch it up with nuts or seeds. Elegant offerings such as roasted leeks with a herby pine nut salsa, or a sliver of coffee parfait topped with salty nuts will be welcome next time I want to cook fancy. Many of the favourite flavours return – there is plenty of tahini, miso, yoghurt and sesame – in new guises: shatteringly crisp polenta-crusted Brussels sprouts get a lemony pop with a slick of preserved lemon and tahini, and ginger and miso get together to bring out the best in a vege noodle bowl. Every recipe has useful swaps and tips so you can mix-and-match and the ‘perfect for work lunches’, ‘meal in itself’ and ‘quick and easy’ lists point the way when imagination is flagging. It’s just the boost as the weather turns warmer and we’re ready to race into summer with enthusiasm. TRACY WHITMEY
