Oaty Pear & Chocolate Cobbler

1 cup whole oats | |
½ cup oat milk | |
5 large pears, peeled | |
125g vegan butter, melted | |
½ teaspoon cinnamon | |
juice of 1 orange & zest of ½ orange | |
½ cup flour | |
½ cup brown sugar | |
ÂĽ cup cocoa | |
1 teaspoon baking powder | |
ÂĽ teaspoon salt | |
dairy-free ice cream or yoghurt, to serve |
This is a delicious plant-based dessert, but you can use regular butter if you prefer and serve with any type of yoghurt, cream or ice cream you like. I love chocolate and orange together but if you don’t then substitute lemon juice or even a liqueur for a more decadent pudding.

Instructions
1. | Heat the oven to 180°C. |
2. | Put the oats in a mixing bowl and stir in the oat milk. |
3. | Leave to soak for at least 10 minutes, stirring once or twice. |
4. | Slice the pears, discarding the cores, and put into a 24cm baking dish (or around that size) with 25g of the butter, the cinnamon and orange juice. |
5. | Cover with foil and bake for 10 minutes, stirring once. |
6. | Combine the flour, brown sugar, cocoa, baking powder, salt and orange zest in a bowl and set aside. |
7. | Combine the remaining melted butter with the oat mixture then fold into the flour mix. |
8. | Spoon over the pears and bake for 30 minutes. |
9. | Serve with ice cream or yoghurt. |
