From the welcoming shot-glass drink in the dramatic white entrance foyer to the intricately layered dishes, Pescatore is a dining experience with a difference. The dining room looks out over the green vista of Hagley Park, but your attention will be focused on the table, as a succession of highly crafted dishes arrives. Sashimi tuna slices are infused with herbs then served with a “soy cloud” mousse; poached lamb loin arrives with a dazzling smoky potato puree; a chocolate dessert is accompanied by parsnip served four ways. It all works beautifully. Service is a highlight, from professional waitstaff who know the menu well and recognise the importance of making dining out feel special. A flow of extra gifts from the kitchen – an amuse-bouche, petit fours, a glass of Champagne and melon – underline the sense that this is a kitchen that wants to share its skill. A vast international wine list supports the bold dishes.
