The wow begins the moment diners pass through the white padded doors into the dazzling Pescatore foyer, on the first floor of The George Hotel. The dining room itself is understated – it is the dining experience that dazzles. From the amuse-bouche of oyster beignet to the final flight of wafers, the food is innovative, thoughtful and skilled, with textural contrasts a hallmark. Beetroot marshmallow teamed with smoked quail is delightfully vibrant, while groper with creamed leek and mussel foam is masterful in its seeming simplicity. A sense of fun is evident too. The shimmering sugar crust of the bubblegum sphere dessert cracks open to reveal a light mousse of intense bubblegum flavour, punctuated by nuggets of liquorice. An extensive yet easy-to-read wine list offers interesting matches and the service is outstanding.

In brief: An oasis of sophisticated dining.

REVIEW FROM Cuisine Good Food Guide 2013
RATING: 14.5/20
From the welcoming shot-glass drink in the dramatic white entrance foyer to the intricately layered dishes, Pescatore is a dining experience with a difference. The dining room looks out over the green vista of Hagley Park, but your attention will be focused on the table, as a succession of highly crafted dishes arrives. Sashimi tuna slices are infused with herbs then served with a “soy cloud” mousse; poached lamb loin arrives with a dazzling smoky potato puree; a chocolate dessert is accompanied by parsnip served four ways. It all works beautifully. Service is a highlight, from professional waitstaff who know the menu well and recognise the importance of making dining out feel special. A flow of extra gifts from the kitchen – an amuse-bouche, petit fours, a glass of Champagne and melon – underline the sense that this is a kitchen that wants to share its skill. A vast international wine list supports the bold dishes.

In brief: Sophisticated contemporary dining.
