Star anise-roasted peaches

Serves: 6These make a lovely simple dessert - perfect with a dollop of cream, or with custard or ice-cream.

6 peaches, washed
2 star anise
2 tablespoons brandy
1⁄4 cup brown sugar
1⁄2 cup walnut pieces, ground to a medium crumb
whipped cream to serve

Preheat the oven to 180°C. Cut the peaches in half and remove the stones. Place the peach halves in a baking dish so they fit snugly but are not overcrowded. Slip the star anise into the bottom of the baking dish and pour 1⁄2 cup water around the peaches. Sprinkle the brandy over the top. Combine the brown sugar and walnuts then sprinkle over everything. Bake for 30-40 minutes or until tender and cooked through. Allow to cool for 10 minutes then serve with whipped cream.
