Summer often sees us entertaining in a more casual way. I tend to eschew formal sit-down affairs because they can feel a bit “starchy”; I find free-flowing conversation is more likely in a casual environment, which is often (though not always) out of the kitchen.

Laid-back family get-togethers simply involve a bit of planning. It helps if most of the cooking can be done ahead and the dishes then served at room temperature.

As it’s inevitable that your carefully cleared-off kitchen bench will become a dumping ground for glasses, keys, handbags and other detritus the moment you turn your back, keeping the amount of cooking to be done on the day to a minimum is a good idea to avoid unnecessary panic. Certainly if you are feeling stressed about your menu then it’s not likely to be a fun day for you.
